Olive and Tofu Combination

 

Serves: 4

Ingredients:

1/3 Cup feta cheese (crumbled)

1/4 Cup red onion or scallion (chopped)

12 Kalamata olives (pitted and chopped)

3 Tbsp. lemon juice

1 Tbsp. olive oil (extra-virgin)

1 1/2 Tsp. oregano (dried)

8 oz. tofu (drained and crumbled)

1/2 Tsp. Salt

1/2 Tsp. ground pepper

1 ripe tomato (coarsely chopped)

1 small cucumber (coarsely chopped)

2 Tbsp. parsley (chopped)

 

Method:

1. In a medium bowl, combine feta, onion, olives, lemon juice, oil and oregano and stir until mixed completely. 

2. Add tofu and mash together with fork.

3. Add salt and pepper. Refrigerate for 20 minutes.

4. Add tomato, cucumber and parsley to mixture.

5. Add salt and pepper to taste.
