Healthy Citrus Salad with Spinach

 

Serves: 6

Ingredients:

2 Tbsp. freshly squeezed lime juice

2 Tbsp. freshly squeezed orange juice

2 Tsp. Dijon mustard (heaping)

2 Tsp. honey

1/4 Tsp. salt

1/4 Tsp. freshly ground black pepper

1/2 Cup. sliced red onions (thinly sliced)

8 Cups. baby spinach

1 Large apple (Cored and thinly sliced)

1/4 Cup. crumbled blue cheese

Method:

1. In a small bowl, whisk together the juices, honey, mustard, salt and pepper to make the dressing. In a large bowl, place onions, apples and spinach.

2. Pour in dressing and toss. Sprinkle it with blue cheese then serve.
