Greens and Nuts with a Garlic Dressing


Serves: 6


1/3 cup and 1/2 cup hazelnuts (chopped, toasted, divided)

2 Tbsp. and 1/2 red onion (chopped, divided)

2 Tbsp. water

4 1/2 Tsp. balsamic vinegar

4 1/2 Tsp. sugar

1/2 Tsp. salt

1 garlic clove (halved)

1/8 Tsp. paprika

1/4 Cup olive oil

5 oz. spring mix salad greens

1 medium pear (thinly sliced)

1/2 crumbled Gorgonzola cheese

1/4 cup dried cherries



1. For Dressing: In food processor, combine 2 tablespoons onion, water, vinegar, sugar, salt, garlic and paprika. Gradually add oil continuously until well blended.

2. Combine salad greens and onions in a large bowl. Add 1/2 of dressing and toss until salad is coated nicely.

3. Top salad with pear, cheese, cherries and hazelnuts. Add remaining dressing.
